Organic Pizza Dough

3 cups Organic Flour

1 tblsp Organic Sugar

1 cup very warm water

1 package active dry yeast

1 tsp salt

Add all to bowl of electric mixer and beat using your dough hooks, scraping down the sides as necessary. You may need to add a tad more water or flour at this point depending on the atmospheric conditions of the day. When it is nicely incorporated, about 7-10 minutes, put the bowl in a warmish place and cover with a damp towel. Let rise until at least double in size, about 2 hours. “punch” back down again by beating briefly with the mixer again, just for a minute or so. Let rise, covered with the towel, again until very fluffy, about 3 or more hours.

Using floured hands, remove from the bowl and portion as desired. Roll your portions around in some flour for easy handling later on  and store in plastic wrap in the fridge or freezer. I don’t know how long it will keep in the fridge because we always use it up quickly. This recipe make two good sized pizzas.
